📜 Ingredients for 4

Marinade:

  • 3 pcs chicken breast
  • 2 tsp smoked paprika (seasoning)
  • 1 tsp cajun seasoning
  • some olive oil

Tomato sauce:

  • 1 pcs red onion
  • 1 pcs garlic clove
  • 1 pcs chilli pepper
  • 50 g tomato puree
  • 1 can chopped tomatoes
  • 1 tbsp honey
  • 1 tsp cocoa
  • some olive oil

Filling:

  • 1 red pepper
  • 1 can sweet corn
  • 1 can beans
  • 8 pcs tortillas
  • 1 bit fresh coriander
  • 200 g ground cheese

🍲 Preparation

Sauce

Cut onions and garlic to small pieces and fry in a pot. (If you have a fresh chilli pepper, add it to the mix and fry it as well.) Add a can of chopped tomatoes and tomato puree. Add salt, pepper, cocoa and honey. Cook until you reach a good sauce concentration.

Meat

Cut chicken meat to small noodle-shaped pieces. Mix with smoked paprika, cajun pepper and a bit of olive oil. Fry the meat together with chopped pepper until it becomes soft.

Filling

Rinse corn and beans, mix with meat and pepper, part of the cheese and coriander.

Enchiladas

Fill tortillas with the filling and stack them onto a baking sheet next to each other. Pour over the tomato sauce and sprinkle the rest of the cheese over the whole baking sheet. Bake at 180 °C for 15-20 minutes.
