For the cake:
- 225 g caster sugar
- 225 g cake flour
- 180 ml buttermilk
- 90 g of butter
- 2 eggs
- 26g red food coloring powder
- 1 tbsp cocoa powder
- 2 tsp white wine vinegar (or lemon juice)
- 1 tsp vanilla extract
- 1 tsp baking soda
Frosting:
- 4 egg whites
- 225 g caster sugar
- 1 tsp vanilla extract
- 1 tsp lemon juice
🍲 Preparation
Cake base
- Preheat the oven to 180˚C. Line two spring cake tins with parchment paper.
- Cream the butter and sugar with a mixer. Beat in the eggs one at a time and mix through the vanilla extract. 3. Sift in the cocoa powder and flour and mix thoroughly with the buttermilk until you have smooth batter. Mix through the red food colouring.
- Whisk together soda and white wine vinegar which will fizz and then stir it through the red velvet batter.
- Split the batter into 2 cake tins and bake them for approximately 20 minutes
Merignue frosting
To make the frosting, place the egg whites, sugar, vanilla extract and lemon juice in a bowl sitting over a pan of simmering water. Using electric whisk, beat on low until the sugar has dissolved completely. Remove the bowl from the heat and continue to beat for 6 minutes until the mixture has soft peaks.
Assembly
Place the first layer on a plate and spread with a third of the frosting. Top with the second layer and spread the remaining frosting across the top and around the sides.
